TWICE BAKED POTATOES 
3/4 c. evaporated milk
1 1/2 tsp. instant minced onion
4 baking potatoes, baked
2 tbsp. butter
1/2 tsp. salt
1 tbsp. parsley flakes
1 c. grated Cheddar cheese

Preheat oven to 400 degrees. Combine milk and onions; let stand. Slice top off potatoes and scoop out pulp, saving the shells. Mash potatoes with milk/onion mixture, butter, salt, parsley and cheese. Spoon potato mixture into shells. Bake 10 minutes. (Potatoes can be frozen before baking. Thaw and bake 30 minutes at 400 degrees.)
