PINEAPPLE CHEESE BREAD 
2 c. flour
3/4 c. sugar
3 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
1 c. crushed pineapple
2 tbsp. melted shortening
1 lg. egg
1/2 c. grated sharp cheese
1/2 c. nuts (chopped)

Sift flour, sugar, baking powder, soda and salt together. Stir crushed pineapple and shortening into beaten egg. Add dry mixture to egg and pineapple. Stir until all is moistened. Lightly stir in cheese and nuts.

Turn into greased loaf pan. Bake at 350 for 1 hour or until brown and thoroughly cooked in center. Use 325 degrees for glass loaf pan. Better the next day.
