BROCCOLI CASSEROLE 
4 oz. cheddar cheese, shredded
1 c. cooked long grain rice
1/2 c. drained, canned mushrooms, sliced
1/2 c. diced onion
1/2 c. skim milk
1 tbsp. butter
3 to 4 c. steamed, chopped broccoli

Preheat oven to 350 degrees. Spray 2 quart casserole with nonstick cooking spray; set aside.

In 3 quart saucepan combine all ingredients except broccoli and salt and cook over medium heat, stirring constantly, until cheese and butter are melted. Add broccoli and salt and cook, stirring frequently until broccoli is heated, about 2 minutes. Turn into sprayed casserole and bake until mixture is heated throughout, about 30 minutes.
