BROCCOLI AND CHEESE TWICE BAKED
POTATOES
 
6 med. baking potatoes
1/2 c. sour cream
3 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
2 green onions, chopped fine
1 1/2 c. cooked and drained chopped broccoli
1 c. shredded cheddar cheese

Bake potatoes until soft (about 50 to 60 minutes). Cut a slice lengthwise of the potato top. Scoop out potato. Mash well and combine in bowl with sour cream, butter, salt and pepper, onions, broccoli and 3/4 cup cheese. Refill potato jackets cover with remaining cheese. Sprinkle with paprika. Bake at 425 degrees for 20 to 25 minutes.
