POTATO HAM SCALLOP 
2 c. cubed fully cooked ham
6 med. potatoes, peeled and thinly sliced
1/4 c. finely chopped onion
1/3 c. all purpose flour
2 c. milk
3 tbsp. fine dry bread crumbs
1 tbsp. butter, melted
2 tbsp. finely snipped parsley

Place half of the ham in a 2 quart casserole. Cover with half of the potatoes and half of the onion. Sift half of the flour over; season with salt and pepper. Repeat layering ham, potatoes, and onion. Season with additional salt and pepper. Sift remaining flour on top. Pour milk over all. Bake, covered, in a 350 degree oven for 1 to 1 1/4 hours or until potatoes are nearly tender. Uncover.

Combine bread crumbs and melted butter. Sprinkle on top of casserole. Top with parsley. Bake 15 minutes more. Makes 4-6 servings.
