CAROL'S CHEESECAKE 
6 oz. Keebler graham cracker ready crust
2 (8 oz.) pkgs. Philadelphia cream cheese
1/2 c. sugar
1 tbsp. lemon juice
1/2 tsp. vanilla
2 eggs, separated
1 (21 oz.) can Comstock Red Ruby cherry pie filling

Combine softened cream cheese, sugar, juice, and vanilla; mix with electric mixer until well blended. Add egg yolks; mix well again. Beat egg whites until stiff in separate bowl. Fold egg whites into cream cheese mixture. Pour all into ready crust. Bake 55 minutes at 300 degrees. When cheesecake is cool, top with cherries and refrigerate. Yum! Yum! Yum!

This cheesecake was my first homemade one. It was really easy to make. Few ingredients was the attraction and it turned out so delicious! The only difficulty was whipping the egg whites to stiff peaks. Overall it was easy and I had everything in my kitchen. I used the low fat cream cheese & I did decrease the sugar to 1/4 cup which makes it really a lower fat & low sugar dessert. I recommend this recipe. Thanks Carol!!!

This was simply the easiest and yummiest cheesecake that I have ever eaten. This was also the recipe I used to make my first cheese cake. Nobody couldn't tell me I didn't go to a to a pastry school. I have officially adopted this recipe as my family recipe. Perfect simple deliciousness.
