HASH BROWN PIE 
1 box hash brown potatoes with onions
4 eggs
1 lb. (2 c.) cottage cheese
2 tbsp. chopped parsley
1/4 tsp. pepper

Rehydrate hash browns according to package directions. Drain well. In medium bowl, slightly beat eggs, then add potatoes. Add remaining ingredients and mix well. Turn into well greased 9 inch pie plate and smooth top. Bake in preheated 350 degree oven 35-40 minutes. Cool for 10 minutes before cutting. Serves 4.
