BANANA SPICE CAKE 
2 1/4 c. cake flour
1 2/3 c. sugar
1 1/4 tsp. baking soda
1 1/4 tsp. baking powder
1 tsp. salt
1/3 tsp. cinnamon
1/3 tsp. allspice
1/4 tsp. cloves
1/4 tsp. nutmeg
2/3 c. shortening
2/3 c. buttermilk
3 eggs
1 1/4 c. ripe bananas, mashed
2/3 c. nuts, finely chopped

Heat oven to 350 degrees. Grease and flour one 13 x 9 inch oblong, or two 9 inch round layer pans or three 8 inch round layer pans. Measure all ingredients into large mixing bowl. Blend 1/2 minute on low speed scraping bowl constantly. Beat 3 minutes on high speed, scraping bowl occasionally. Pour into pan(s). Bake oblong cake 40 to 50 minutes, layers 35 to 40 minutes, or until toothpick poked into center comes out clean. Let cool before frosting. Serves 10.
