PIEROGI 
DOUGH:

2 c. flour
2 eggs
1/4 tsp. salt
2 tbsp. water
1 tsp. butter or oil

FILLING:

1 c. dry cottage cheese
1/2 c. mashed potatoes
1 egg
2 tbsp. sauteed onions
Dash salt & pepper

Mix dough ingredients and knead into soft dough. Roll out thin on a board. Cut 2" squares. Take filling and mix thoroughly but lightly. Place a small spoonful of filling on one side of dough square. Fold the other side of dough over and pinch edges together to form a triangle shape. Place in a buttered dish. To remainder of cottage cheese add up to 1 cup milk if necessary and pour over pierogies. Preheat oven to 350 degrees and bake 15 to 20 minutes.
