LINDA'S FRESH APPLE CAKE 
2 c. sugar
1 1/2 c. vegetable oil
3 eggs
2 tsp. vanilla extract
3 c. all purpose flour (divided)
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 c. peeled, diced apples
1 c. chopped pecans

Combine sugar, oil, eggs and vanilla in large bowl. Beat 1 minute at medium speed of electric mixer. Combine 2 1/2 cups flour, soda, salt and cinnamon. Gradually add to sugar mixture. Beat at low speed until blended.

Dredge apples and pecans in remaining 1/2 cup flour. Fold into batter. Spoon batter into a greased and floured 10 inch tube pan. Bake at 325 degrees for 1 hour and 30 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan 15 minutes remove from pan and let cool completely. Spread frosting on top of cake.

FROSTING:

1 c. firmly packed brown sugar
1/4 c. evaporated milk
1/2 c. butter

Combine all ingredients in saucepan. Cook over medium heat stirring frequently until mixture comes to boil and sugar is dissolved. Continue to stir until reach softball stage (240 degrees). Remove from heat and beat 5 minutes or until thick enough to spread. Yield enough for 1 (10 inch) cake.
