GINGER SWORDFISH | |
1 swordfish steak, 3/4 inch thick 2 tbsp. grated, peeled gingerroot 2 tbsp. soy sauce 1 tbsp. olive or salad oil 4 lemon wedges 3 tbsp. water You can buy 4 steaks already cut up. Shark steaks may also be used. Remove skin from swordfish; cut into 4 pieces. In shallow baking dish, combine oil, soy sauce, gingerroot, and 3 tablespoons water; add swordfish, turning to coat. Cover; refrigerate 1 hour to blend flavors. Preheat broiler. Spray rack in pan with vegetable cooking spray. Place swordfish on rack, reserving ginger-soy sauce, broil about 10 minutes, turning once with pancake turner, or until fish flakes easily with fork. To serve, heat reserved ginger-soy sauce to boiling, pour over fish. 4 servings. Can grill outdoors. Place fish on grill over medium heat about 5 minutes. Follow other instructions above. |
