TWICE - BAKED POTATOES 
8 baking potatoes
5 tbsp. butter
1 c. sour cream
Salt & pepper
Paprika and/or grated cheese, optional

The night before: Scrub, pierce, grease and bake potatoes at 450 degrees for 50 minutes. Cut potatoes in half, scoop out insides. Mash or whip in mixer with 3 tablespoons butter, sour cream and salt and pepper to taste. Refill potato shells. Chill.

The next day: Brush with 2 tablespoons melted butter. Sprinkle with grated cheese and/or paprika. Reheat at 450 degrees for 15-30 minutes.
