POTATO SALAD 
25 SERVINGS:

5 lbs. potatoes
1/2 c. French dressing
4 hard cooked eggs
6 tbsp. green pepper, finely chopped
1/2 c. pimento, finely chopped
3 c. celery, sliced thin
1/4 c. onion, finely chopped
2 c. salad dressing

50 SERVINGS:

10 lbs. potatoes
1 c. French dressing
8 hard cooked eggs
3/4 c. green pepper, finely chopped
1 c. pimento, finely chopped
6 c. celery, sliced thin
1/2 c. onion, finely chopped
4 c. Salad dressing

Cook potatoes in jackets, peel and dice. Mix French dressing with potatoes. Add eggs, pepper, pimento, celery, onion and mix lightly. Add salad dressing 1/2 cup at a time, until tasty. Garnish with chopped or whole parsley, pimento, sliced hard boiled eggs.
