MOM'S TOP OF STOVE RICE PUDDING 
1/2 c. regular rice
1 c. water with 1/4 tsp. salt
4 c. milk
1/2 stick butter
1/2 c. sugar
2 eggs
1 tsp. vanilla
1/2 c. raisins
1 tsp. cinnamon

Pour rice into boiling water and cover. Simmer or cook for 7-10 minutes until rice is slightly under done. Add milk, butter and 1/4 cup of the sugar. Stir. Bring to a boil. Cook for 1 hour in low flame. No need to stir. Beat eggs with a fork, 1/4 cup sugar and vanilla. Add raisins. Pour into rice, stirring slowly until rice thickens. Pour in Corning Dish. Sprinkle with cinnamon on top. Enjoy warm or cold.

AMAZING! I spent quite a bit trying to find a simple rice pudding recipe on-line and I finally landed on this one. Most of what I had found was a bit complicated, using condensed milk in addition to regular milk, baking, etc. When I saw this one, it looked like the right fit for me. It was! I did add a little more water during the first step, as the water was evaporating quickly through the lid. I also added, in the last step, some lemon zest like my grandmother used to when I was a kid. This recipe works great, is creamy, makes plenty and tastes just the way my gran used to make it (well, with lemon zest added).

I have been searching for a long time for a recipie like my mother's. This is it. Awesome! Easy to make and delicious. Made it as the recipie, but cut down on the butter to 2 tbsp. and it brings back memories of my childhood.

This recipe is so easy & delicious. I used fat free milk & it still came out thick, creamy & the best I ever had. Sorry Mom, this even beats yours. Also, I cut down on the butter. I only added 2 tbsp., and I stirred in the 1 tsp. of cinnamon with the egg at the end and topped with a little more cinnamon & freshly grated nutmeg & served it warm.
