BROCCOLI CHEESE SOUP 
1 lg. head broccoli, cooked until tender
2 tbsp. butter
2 shallots or 1 sm. onion
1 tbsp. flour
4 c. chicken stock
2 c. sharp cheddar cheese, shredded
Salt and pepper to taste
1 clove garlic, minced
1/4 c. sliced black olives

Saute shallots and garlic; add flour. Add chicken stock, stirring constantly. Add cheese and stir until melted. (Do not over heat or cheese may curdle.) Add broccoli and olives.

VARIATION: Increase flour to 4 tablespoons. Add 1 cup milk or half and half with cheese.
