PEACH COBBLER 
4 slices white bread
4 peaches, peeled & sliced
Cinnamon
4 c. skim milk, scalded
4 eggs
1 tsp. vanilla
Artificial sweetener to equal 3/4 c. sugar

Break bread into small pieces and arrange in a shallow baking dish. Arrange peach slices over the bread and sprinkle with cinnamon. Pour milk into blender, add eggs, vanilla and sweetener. Blend at high speed about 30 seconds.

Pour milk mixture over peach and bread, being careful not to overflow the dish. Lift a few pieces of the bread up to help form a top crust. Bake at 325 degrees for 25 minutes or until done.
