CHOPPED LIVER | |
1 lb. sliced yearling liver 1 sm. onion 3 hard-cooked eggs 3 tbsp. mayonnaise or salad dressing 3 tbsp. chicken fat (which has been rendered) 1/2 tsp. salt Dash of pepper Broil liver carefully, just until done and not dry. Grind liver, onion and eggs with finest blade of the grinder. (A piece of dry bread or a couple of crackers run through last helps push all food through the grinder.) Mix well with rest of ingredients. Press firmly into small oiled mold. Cover and chill. Remove from refrigerator about 1 hour before serving. Unmold and serve with party rye bread or crackers. |
