SPANISH RICE 
1 lb. ground round or chuck beef
2 c. cooked rice
1 lg. onion, chopped
1/3 c. chopped green pepper
1/2 c. chopped celery
No. 2 can stewed tomatoes
Salt and pepper to taste

Cook rice as directed on package. Brown ground meat. Then add onion, celery, pepper. Brown vegetables lightly. Stir in cooked rice. Add can of tomatoes. Simmer all ingredients until well blended and desired consistency. This casserole can be made ahead, reheated in conventional oven or microwave oven, or served immediately. Serves 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
