BEEF MINESTRONE 
1 lb. ground round
1 c. each: chopped onion, cubed peeled potatoes, chopped tomatoes, shredded cabbage and chopped carrots
1/2 c. chopped celery
1/4 c. uncooked long grain rice
1/2 tsp. dried basil
1/2 tsp. dried thyme
6 c. water
1 bay leaf
1/4 tsp. pepper
grated Parmesan

Cook meat in Dutch oven; cook onion until tender. Add water and other ingredients except Parmesan. Bring to boil, then reduce heat and simmer 1 hour. Discard bay leaf. Sprinkle Parmesan over each serving.

Serves 10.
