CORNISH HENS A LA BRUYERE 
2 cornish hens
1/2 stick butter
1 lg. garlic clove, crushed
1/3 c. soy sauce
2 tbsp. sherry or brandy
1/4 c. chopped parsley

Preheat oven to 400 degrees. Pound hens with meat mallet. Combine butter, garlic, soy sauce, sherry and parsley in pan and cook until butter is melted. Brush hens with mixture and bake, basting from time to time. Bake 45 minutes. Can be done with chicken or fish.
