CALIFORNIA QUICHE 
1 1/2 c. chopped fresh mushrooms
1/2 c. finely chopped celery
1/2 c. finely chopped green onion
2 tbsp. butter
6 eggs
1 1/2 c. milk
1/4 c. flour
1 tsp. seasoning salt
1 tsp. paprika
1 c. chopped crisp fried bacon, chopped or
1 c. cooked cubed ham
1 c. shredded Swiss cheese
1 c. shredded Cheddar cheese

Saute mushrooms, celery and onion in butter until limp; set aside. Beat eggs, add milk, flour, salt and paprika; beat well. Stir in bacon and cheese (or ham if used). Stir in mushroom mixture. Cover and chill.

To bake: Stir well and turn into buttered deep 9 inch quiche dish or deep pie plate. Bake in 350 degree oven for 50-55 minutes or until center is firm. Remove from oven and let stand 10 minutes before serving. Serves 6-8.
