APPLE PANCAKES | |
This makes a wonderful brunch dish. It can be made in individual sizes or you can make large pancakes, cutting them into sections when serving. You can use any apple that is available. The Granny Smith type is particularly good. Preparation time: 20 minutes. Cooking time: 3 minutes for each pancake. FOR 4 SERVINGS YOU WILL NEED: 1 c. milk 1/2 c. whipping cream 1 c. all-purpose flour 1 tsp. baking powder 2 tsp. sugar 1 tsp. vanilla extract 4 eggs, separated Butter for cooking 4 apples, peeled, cored & cut into thin slices Confectioners' sugar 1. In a blender container put the milk, cream, flour, baking powder, sugar, vanilla and egg yolks. Blend until smooth. Strain to be sure there are no lumps. 2. Beat the egg whites until stiff, but not dry. Fold them gently into the batter. 3. Melt a little butter in a 9 inch frying pan. Pour in a thin layer of batter. As the pancake begins to set, arrange some of the apple slices on top, pushing them lightly into the pancake. 4. When the bottom is browned, turn the pancake over. To do this, slide the pancake out of the pan onto a flat plate, apple side up. Place the frying pan over the pancake and flip plate and pan over so that the pancake is back in the pan, cooked side up. Finish cooking. 5. Repeat with the remaining batter and apples. 6. When serving, sprinkle the top with confectioners' sugar. TIPS: The batter can be made ahead of time, except for the beating of the egg whites. When preparing the apples ahead of time, sprinkle them with a little lemon juice and keep them covered to prevent discoloring. You may leave the apples unpeeled, if you wish. FOR 2 SERVINGS: Half of the ingredients. FOR 8 SERVINGS: Double the ingredients. |
