ZUCCHINI SQUASH OMELET 
3 small zucchini, peeled
1 small onion, chopped
6 eggs, well beaten
1/2 cup grated cheese
salt, pepper, parsley, garlic and seasoning salt to taste
cracker crumbs

Boil zucchini until tender; mash. Brown onion. Combine all ingredients but crumbs; top with crumbs;

Bake in greased pan at 375°F for 45 minutes or until a silver knife comes out clean.
