FRUIT-JUICE SNOW 
1 env. Knox unflavored gelatin
1/2 c. cold water
1/2 c. sugar
6 oz. can frozen fruit juice concentrate
3/4 c. ice water
2 unbeaten egg whites

In medium saucepan, mix unflavored gelatin with cold water. Let stand 1 minute. Stir over medium heat until gelatin is completely dissolved, about 1 minute; remove from heat. Stir in sugar, frozen concentrate, and ice water. Stir until concentrate melts. Chill, if necessary, until slightly lumpy. Place egg whites in a chilled bowl; add gelatin mixture. Beat at high speed with electric mixer until mixture begins to hold shape, about 7 minutes. Spoon into 6 cup bowl or individual dessert dishes. Chill until firm.

Do not use pineapple juice, it will not gel.
