BAKED CHICKEN REUBEN 
Chicken pieces of choice to serve 4, skinned
16 oz. sauerkraut, drained
Slices of Swiss cheese or Mozzarella
1 1/2 c. Thousand Island dressing
1 tbsp. chopped parsley

Put chicken in baking dish and lightly sprinkle with salt and pepper. Put sauerkraut over chicken and top with Swiss cheese. Drizzle dressing evenly over cheese. Sprinkle with parsley. Cover with foil and bake at 325 degrees about 1 1/2 hours.
