1-1/2 c. rice, cooked 1 lb. ground beef OR 4-6 boneless chicken breasts 2 sm. cans tomato sauce 1 lg. onion, diced 1 clove garlic, minced Fiesta frozen vegetables Grated cheddar Salt and pepper to taste Measurements for this recipe depend on taste and the number of people to be served. Brown the ground beef or chicken breasts in a large skillet. Add the onion, garlic, and salt and pepper to taste. Add tomato sauce. Simmer 20 minutes. Add the frozen vegetables and cheese. Simmer until vegetables are tender. Stir in the rice and serve. |
