COFFEE COOKIES 
2 c. brown sugar
1 c. butter
2 eggs
1 c. cold coffee
1/4 tsp. salt
4 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
2 c. chopped raisins
1 c. chopped nuts

Cream butter and sugar. Add 1 egg at a time and beat to a creamy consistency. Sift together dry ingredients and add alternately with coffee. Cut in raisins and nuts; add vanilla. Drop from a teaspoon on a cookie sheet and bake in hot oven, 400 degrees F., for 12-15 minutes. Yields 8 dozen.
