SEAFOOD NEWBURG 
1/3 c. butter
1/3 c. flour
3 c. milk
1 1/2 tbsp. prepared mustard
1 1/2 tsp. salt
1/4 tsp. paprika
1/4 tsp. pepper
1 c. lobster meat, cooked & cut up
2 c. haddock, cooked
1 1/2 c. scallops or shrimp, cooked
1 c. mushrooms, sliced & cooked
1/3 c. cheese, grated

Melt butter; stir in flour and blend well. Add milk and cook over low heat, stirring constantly until thickened. Add prepared mustard, salt, paprika and pepper; mix well. Fold into seafood chunks. Add mushrooms. Turn into a greased 1 1/2 to 2-quart casserole. Sprinkle with grated cheese. Bake in a moderate oven for about 25 minutes, or until sauce starts to bubble.
