EGG CASSEROLE 
6 hard boiled eggs
1 c. rice (quick cooking)
1 1/2 c. diced ham (or 1 can Spam)
1/2 c. diced cheese
1 lg. can stewed tomatoes
1 onion
1 sweet pepper
2 stalks celery
1/4 tsp. sweet basil
1/4 tsp. parsley flakes
1 tbsp. flour

In large buttered casserole place the rice, ham and sliced eggs in layers. Cover with cheese and dot with 1 tablespoon butter.

In blender combine the tomatoes, onion, pepper, celery, flour, sweet basil and parsley flakes. Blend on puree and pour over the mixture in casserole. Bake, covered with bread crumbs in 350 degree oven for 50 minutes.
