DUEY'S CHICKEN FRIED STEAKS 
Tenderized round steak or cube steaks
3 tsp. canola oil
1 egg
1/2 c. flour (unbleached)
Salt
Pepper

Slice up steak into serving slices, remove all fat. Dip into beaten egg and coat with 1/2 cup flour, salt, and pepper. Repeat. Get oil hot in cast iron skillet and fry steaks. With remaining oil make gravy. Whip some potatoes and steam some vegetables for a complete country meal.
