SCALLOPS FRICASSEE 
1 lb. scallops
Salt & pepper
1 tbsp. butter or cooking spray
1 tbsp. lemon juice
1/4 c. white wine
3/4 cream of evaporated milk

Sprinkle scallops with salt and pepper; dust with flour. Spray a large fry pan with cooking spray or use butter and heat to very hot. Add scallops and stir fry 4-6 minutes for sea scallops, or 2-3 minutes for bay scallops. Scallops should become opaque. Do Not Overcook!

Mix lemon juice, white wine and milk; pour over scallops. Bring just to boil. Adjust salt and pepper to taste. Garnish with parsley. Serve with broccoli and rice. Serves 4.
