LAYERED MIXED VEGETABLE SALAD 
1 head lettuce, torn in bite size pieces
1/2 c. onion, green or red, chopped
1 stalk celery, sliced
1 sm. green pepper, chopped
10 oz. pkg. frozen peas, thawed and drained
1 c. mayonnaise or salad dressing
2 tbsp. sugar
2 c. shredded cheddar
10 slices bacon, fried, drained, and crumbled
8 oz. can water chestnuts, sliced and drained

In large glass bowl or 13 x 9 pan, layer lettuce and onion. Spoon 1/2 cup mayonnaise evenly over top. Layer celery, green pepper, and peas, spread remaining mayonnaise over top. Sprinkle sugar, cheese and bacon over top.

Cover and refrigerate at least 8 hours. Add water chestnuts and toss before serving. Grated Romano or Parmesan may be substituted for cheddar.
