ERWTEN SOEP 
1 1/2 c. green split peas
3 qts. water
2 lbs. pork ribs
1 tsp. salt
3 leeks, thinly slice or 2 med. white onions, sliced
2 stalks celery, chopped
3 med. sized potatoes, peeled & cubed
Leafy tops from 1 bunch of celery
1 lg. smoked sausage or 1/2 lb. frankfurts, sliced

Soak the peas in water to cover overnight. Drain the peas and place them in a large pan with the water, pork ribs and salt. Bring to boil.

Lower the heat and simmer slowly for 3 hours. Add leeks, celery, potatoes and celery tops and simmer another 45 minutes, stirring occasionally. Add sausage or frankfurts and simmer 10 minutes more. Makes 6-8 servings.
