DIJON CHICKEN 
2 whole boneless chicken breasts, cut into 4 halves
1 pkg. herb seasoned Pepperidge Farm stuffing mix (crushed fine)
2 tbsp. butter
2 tbsp. Dijon mustard

Melt butter and mix in Dijon mustard. Coat chicken in butter/mustard mix and roll in stuffing mix to completely coat. Bake at 350 degrees for 20-30 minutes. Serves 4.

Can also be cut into bite-size pieces and served by toothpicks as an appetizer.

Can also use "bone in" chicken pieces but will need to alter cooking time.
