PEPPER STEAK 
1 lb. round steak, 1/8" strips
1/2 c. soy sauce
1 clove garlic
1/2 tsp. ginger
1/4 c. oil
1 c. chopped green onion
1 c. red bell pepper strips
1 c. green bell pepper strips
1 c. celery, sliced
1 tbsp. cornstarch
1 c. water
2 tbsp. cut in wedges
1 c. sliced mushrooms

Combine soy sauce, garlic and ginger. Add beef; toss and set aside. Heat oil in large skillet. Add beef and brown. Simmer for 40 minutes on low heat. Turn heat up and add vegetables. Cook 15 minutes. Mix water and cornstarch and stir until thick. Add tomatoes and simmer 15 minutes. Serve over white or brown rice.
