ITALIAN SOUP 
medium/hot Italian sausage or 1 lb. ground beef
2 cans tomatoes, whole
1 can tomato sauce
2 cans chicken broth
3 c. potatoes, diced (with or without skin)
1 c. onion, chopped
3 tbsp. basil
4 tbsp. parsley
2 tbsp. oregano
salt and pepper to taste
2 to 3 cups of water (depending on how thin or thick you want)

Remove casing from sausage and roll into small balls (unless you're using ground beef) and brown. Drain meat. Add all other ingredients to large pot. Stir; bring to boil and simmer until potatoes are done.

Note: Can be served in carved-out baked potatoes, garnish with Parmesan cheese.
