POTATO PANCAKES 
3 lg. raw potatoes, grated
3 eggs, separated
1 1/4 c. flour
3 tsp. salt
1/4 tsp. pepper
1 lg. sour apple, grated
1 tsp. onion juice

Beat egg yolks, and add to potatoes. Combine remaining ingredients; add stiffly beaten egg whites. Fry in deep bacon grease. Try applesauce over cakes, served with bacon.
