MOCK APPLE PIE 
Pastry for 2 crust 9 inch pie
30 Ritz crackers
1 3/4 c. water
1 3/4 c. sugar
1 3/4 tsp. cream of tartar
2 tbsp. lemon juice
2 tbsp. butter
1/2 tsp. cinnamon

In a large saucepan, bring to a boil the water, sugar, and cream of tartar. Simmer for 10 minutes. Add crackers and continue to simmer for 5 more minutes. Remove from heat and add lemon juice. Pour into pie shell. Place top crust over pie. Dot with butter and sprinkle with cinnamon. Place in oven and bake at 425 degrees for 30-35 minutes. Cool completely.
