"CHUNK" CUCUMBER PICKLE | |
1 gal. cucumber chunks 1 gal. water 1 1/2 c. lime 4 1/2 lbs. sugar 1 qt. cider vinegar 1 qt. water (I use 1 pt.) 1 tbsp. salt 1 tsp. red or green food coloring 1 tbsp. mixed pickle spices Remove peeling and seeds from cucumbers; cut into chunks. Combine water and lime. Soak cucumbers in lime solution for 24 hours using an enamel, glass or stainless steel container. Rinse cucumbers well and soak 3 hours longer in clear water; drain. Combine sugar, vinegar, salt, water and food coloring; heat to make syrup. Put spices in syrup mixture. Soak cucumbers in syrup mixture overnight. The next day, boil for 35 minutes to 1 hour or until tender and clear. Place in jars and seal. (Will seal on their own). |
