PIZZA RUSTICA 
3 lb. Italian sausage
2 tbsp. water
3 lb. ricotta
1 lb. mozzarella
1/4 c. grated cheese
8 lg. eggs
1/4 lb. proscutto or salami
1 tbsp. parsley

Brown sausage in skillet with water and drain thoroughly and put into bowl. Cut proscutto into strips and then into squares. In another bowl mix ricotta and mozzarella cheese and parsley then add one egg at a time, beating well with hand mixer. Then fold meats into cheese mix. Then pour into pre - cooked pie shells from the oven (2 or 3 minutes to crisp). You can make lattice effect on top. Place in oven for 15 minutes at 400 degrees then lower heat to 325 degrees for 30 to 40 minutes. The top of the pie should be firm to the touch.
