RHUBARB CUSTARD PIE 
Pie:

3 cups rhubarb, chopped
1-1/2 c. sugar
3 tbsp. flour
1/4 tsp. salt
1/4 tsp. nutmeg
2 eggs
1 tsp. vanilla
1 tbsp. milk

Beat eggs; add vanilla, milk, nutmeg, salt, flour and sugar; add rhubarb and mix well. Pour into deep-dish pie shell. Mix topping ingredients and sprinkle over pie.

Bake at 450°F for 7 minutes. Reduce oven temperature to 350°F and bake until golden brown.

Topping:

1/2 c. sugar
1/2 c. flour
1/4 c. butter

Mix ingredients. Sprinkle on pie.
