1-2-3 PICKLED BEETS 
30 sm. beets
1/2 c. liquid from beets
1 c. sugar
1 1/2 c. vinegar

Boil beets until tender. Drain, reserving liquid. Remove skins. Pack beets in hot sterilized jars. Meanwhile, combine remaining ingredients and bring to a boil. Cover beets with liquid and seal.
