BEEF STEW 
3 lbs. stew meat
Salt & pepper
1/2 c. butter
2 1/2 lbs. sm. onions
1 can (6 oz.) tomato paste
1/3 c. red wine
2 tbsp. red wine vinegar
1 tbsp. brown sugar
1 clove garlic, minced
1 sm. cinnamon stick
1/4 tsp. ground cumin
2 tbsp. raisins
1 bay leaf
1/2 tsp. whole cloves

Season meat with salt and pepper. Melt butter in large pot, add meat and coat with butter but don't brown. Arrange onions over meat. Mix tomato paste, wine, vinegar, sugar and garlic; pour over meat and onions. Add bay leaf, cinnamon, cloves, cumin and raisins. Cover kettle and simmer 3 hours. DO NOT STIR.
