ALICE'S BEST OF BOTH WORLDS
MUFFINS
 
2 c. skim or 1/2% milk
2 c. All bran with extra fiber
1 tbsp. baking powder
2/3 c. sugar
1/4 tsp. salt
2 c. oat bran
2 egg whites, slightly beaten
1 tbsp. vegetable oil

OPTIONS:

2 very ripe mashed bananas
1 1/2 tsp. cinnamon

Soak All Bran in milk 15-20 minutes (or microwave on High power for 1 1/2 minutes). Mix remaining dry ingredients. Add oil, egg whites and All Bran-milk mixture all at once. Stir only until combined. Divide evenly into 18 muffin tins (lined or sprayed with Pam). Bake at 400 degrees for 12-15 minutes. Yield: 18 muffins. Per serving: 89 calories; 1.8 grams fat; 5 grams dietary fiber; 140 mg sodium.

Since microwave ovens vary in power, you may need to adjust your cooking time.

We loved this...I made what I thought was 2 changes, but turns out to be 3...I had Fiber One, not all bran, so I soaked the cereal in Almond Milk, but it didn't all absorb like the other cereal would have, so I discarded half. Secondly, I left out the oil.
Another thing that may have been a change was that I didn't exactly know what oat bran was, so I ground up some oats. It worked for us. Also, I halved the sugar and subbed stevia.
I'm giving 5 stars, as I made the changes based on dietary restrictions and pantry availability. I would make it as is and do it again! YUM! Thanks for sharing. I had some of that cereal and thought what am I gonna do with it! This was perfect.
