CRANBERRY APPLE MUFFINS | |
1 cup all-purpose flour 1/2 cup whole wheat flour 1 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. salt 2 large eggs 3/4 cup dark brown sugar 1/4 cup vegetable oil 1 tsp. vanilla 3/4 cup diced cranberries 3/4 cup diced apples Preheat oven to 350°F. Grease and flour muffin pans. In a medium bowl, combine flours, baking soda, cinnamon, and salt. In a separate bowl, whisk together the eggs and sugar. Add oil and vanilla. Stir in fruits and 1/2 cup walnuts, if desired. Fold in dry ingredients mixing until just moistened. Pour into prepared pans. Bake large muffins 25 to 30 minutes or miniature muffins about 20 minutes. |
