CRANBERRY MUFFINS 
1 1/2 c. flour
4 tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
Nutmeg
1 c. nonfat plain yogurt
3 tbsp. butter or unsalted butter
1 tsp. grated lemon peel
2 tsp. lemon juice
1 egg
2/3 c. coarsely chopped cranberries

Spray tins with non-fat spray. Stir together flour, 3 tablespoons sugar, baking powder and baking soda in medium bowl. Mix yogurt, butter, lemon peel, lemon juice, and egg in small bowl until smooth. Stir into flour mixture until flour is moistened. DO NOT OVERMIX.
