STUFFED TOMATOES 
6 med. tomatoes
1/4 c. Parmesan cheese
1/2 c. ricotta cheese
1 (10 oz.) frozen spinach
1 egg
Salt & pepper

Scoop out tomatoes. Squeeze liquid from thawed spinach then mix with other ingredients. Stuff lightly. Bake at 350 degrees for 30 minutes.
