NOT SO HO HUM ZUCCHINI CASSEROLE | |
2 pounds of zucchini or combination of disc shaped summer squash and or baby crook neck yellow summer squash 1 finely chopped med. onion 1 stick butter 1 c. hot water or chicken broth 1 pkg. chicken flavor stuffing mix 3/4 c. grated Monterey Jack cheese In kettle, slowly saute' onion in butter until soft. Squash should be cut in about 1/2 inch size pieces. Add squash, then cover pan and cook 5 minutes. Remove cover and gently fold squash into onion-butter mixture, so that squash is now on bottom of pan. Simmer for 2 or 3 minutes then add 1 cup hot water or chicken broth. Do Not stir, but add flavor packet from stuffing mix to the liquid and simmer for 2 or 3 minutes. Add the stuffing mix, gently folding with large spoon. When blended, sprinkle grated Jack cheese on top of all. Cover kettle, turn off simmer burner and allow to stand until cheese is melted. Serve. |
