ZUCCHINI BREAD 
2 1/2 c. all-purpose flour
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
3 eggs
1 c. pecans
3/4 c. oil
1 1/2 c. sugar
2 tsp. vanilla
2 c. shredded zucchini with peel
1 sm. can crushed pineapple
1 tbsp. orange peel
1 c. raisins (opt.)

Mix flour, salt, baking powder, soda and cinnamon. Add remaining ingredients. Pour batter in 2 large greased loaf pans. Bake at 350 degrees for 1 hour.
