EASY CHICKEN WITH WINE | |
1 loaf Italian bread 1 lb. boneless skinless chicken breast, cut into pieces 8 oz. Mozzarella cheese, sliced or shredded 1 can of mushrooms or fresh 1 lg. onion, sliced and cut in half 2 tbsp. butter 1/2 c. white wine (any wine can be used in place of white) Salt, pepper to taste Slice Italian bread about 1 inch thick, cover with Mozzarella cheese. Place on a cookie sheet. In a large skillet, saute onion and mushrooms until tender. Place chicken in a 9 x 13 baking dish, pour on wine, onions and mushrooms, salt and pepper to taste. Bake at 350 degrees covered with foil about 20 minutes or until chicken is done. Remove foil from chicken for last five minutes. Put cookie sheet with bread in oven until cheese melts. Serve chicken, onion, mushrooms over bread. I pick it up and eat like pizza. Delicious! Easy! Can be prepared, covered ahead of time. Preparation time 15 to 20 minutes, cooking time, 20 minutes. I serve it with a salad and baked potato and of course, a glass of wine. |
